Ein's Favourite Pistou Sauce

By request, here is my favourite Pistou Sauce, taken from Twelve Months of Monastery Soups.  Enjoy!

Ingredients

  • 7 garlic cloves
  • 10 basil leaves
  • 1 cup olive oil
  • 6 tablespoons grated Parmesan cheese

 

Preparation (Official)

  • Mash the garlic cloves in a mortar.
  • Add the basil leaves and continue mashing or pounding with a pestle until they are well mixed.
  • Add the grated cheese and mix well until it turns into a stiff paste.
  • Place the mixture in a serving bowl and add the olive oil a little at a time.
  • Mix well until it's all an even consistency

 

Notes

I have a confession: I use more garlic.
I have a second confession: I use a blender.  I do the garlic and basil with the oil first and then start adding the cheese.
