Ein's Favourite Pistou Sauce
By request, here is my favourite Pistou Sauce, taken from Twelve Months of Monastery Soups. Enjoy!
Ingredients
- 7 garlic cloves
- 10 basil leaves
- 1 cup olive oil
- 6 tablespoons grated Parmesan cheese
Preparation (Official)
- Mash the garlic cloves in a mortar.
- Add the basil leaves and continue mashing or pounding with a pestle until they are well mixed.
- Add the grated cheese and mix well until it turns into a stiff paste.
- Place the mixture in a serving bowl and add the olive oil a little at a time.
- Mix well until it's all an even consistency
Notes
I have a confession: I use more garlic.
I have a second confession: I use a blender. I do the garlic and basil with the oil first and then start adding the cheese.
